- 2 sticks butter
- 2 cups all-purpose flour
- 1 1/2 cups old fashioned rolled oats
- 3/4 cup brown sugar
- 1 bag butterscotch chips
- 1 8 ounce package of cream cheese
- 1 can sweetened condensed milk or la lechera
- juice of 1 lemon
- 1 teaspoon vanilla extract
preheat your oven to 350 degrees, and in an 8 inch pan spray it generously with baking non stick spray.
In my stand mixer i combined the flour, oats. Then I added the butterscotch chips and the butter. keep mixing it until you get clumps when pressed in between your fingers.
Press half of the mixture in your pan (save the rest). Pop. it in the oven for 12-15 minutes, takee it out of the oven and completely cool.
Beat together the cream cheese, lemon, juice, sweetened condensed milk, and vanilla until there are no lumps. Spread the cream cheese mixture evenly over the cool oatmeal mixture.
Sprinkle with remaining oatmeal mixture and bake for 40 minutes (when the top is golden).
(don’t make the same mistake as me and put a lot of the oatmeal mixture on top, I think I did too much)
This is sweet so you can just take the butterscotch out completely if you don’t like sweet SWEET recipes.
if you have some of the oatmeal mixture leftover save it and make cookies out of it.
